No matter how I bend my hand, I can't make that position. I've never seen it
before either

It does look like a barred C chord though. Any tips

Half barre with second finger for the 565, then 3rd and 4th fingers for the 7 and 8.

It is a barred Cmaj root, with a muted or unplayed 5th. At the 5th fret
position this will be an Fmaj with a muted bass

Yes, just an F - ignore my F7 comment (mistakenly saw an E in there)

It's just a C shape with a bar on 5, making it an F. You can play F in
other ways, for example if you make an E shape and bar on 1 you also get
a F cord. Sounds a little different, but might be easier for you to bar.
(this of course is all assuming standard tuning).

To play it as is: bar across 5, and then reach for the others. A little
difficult for my shorter fingers, but I managed it. You can mute the big
string with your pinky as it reaches 8, or slightly lift your index on
the big string, or just don't hit the big string on your strum, whatever
your fancy.
