I'm looking at using the Future Technology USB UART in a project. If I need two UARTs, can the USB side just be paralleled, or do I need a hub of some sort?

Harold:

You need a USB hub; two active USB devices can't share a single USB
cable.

You need a hub.

NB better call it FTDI, that is what most people call it.

I see the consensus is "I need a hub." If I want to put two FTDI UARTS in one product, is there a suggested "hub chip" I can also put in the product to handle this?

   There are a number of hub chips on the market; Cypress makes a
   few.

   However... It may be easier to ship your product with two cables,
   and let your customer use the "root hub" inside his PC or buy a
   $10 external hub.
